旧时，一般店铺学徒学习期为三年，没有工钱，剃头、洗衣（皂钱）由店里包下，到年底才有几元钱。商店雇用店员，一般一年为期。每年除夕，吃完“分岁酒”。店员们提心吊胆，因为这是决定店员来年去留的关键时刻。有的老板把新的一年录用人员名单贴出，如没有名字，就得离店去另找职业。

有些商店采用传统习俗，即老板在“分岁酒”时，亲自端来一碗鱼，鱼头朝员工，那么这个店员就是被解雇者；如鱼头朝老板自己，那就全部店员照旧录用，众人就皆大欢喜。
Some store used traditional customs，namely，when they were having the “Fengsui wine”，the boss brought a bowl of fish by himself.If the head was put toward the employees，then they are sacked；on the contrary，if the head was put toward the boss himself，then all the staff would remain hired.
