摘 要

葡萄酒发酵过程中,温度过高会导致葡萄酒的口感和香味变差,温度的控制对葡萄酒的品质起着重要的影响作用。因此,对发酵过程中发酵罐内温度分布规律研究,有助于对发酵过程中发酵温度的控制,提高葡萄酒的品质。

本文通过运用ANSYS10.0有限元热分析软件,对发酵过程中温度场的温度变化进行模拟与分析。分析干白葡萄酒在实验室内发酵罐中的整体温度、不同平面的温度分布、在一段时间同一平面上连续的温度变化。运用软件模拟干红葡萄酒的温度分布,分析发酵罐内的整体及局部温度变化趋势,分析发酵罐内流场的变化。从而为实际的发酵过程中,换热器的放置及发酵罐内制冷装置的设计提供理论依据。

实验室测定干白葡萄酒,室温维持在18℃上下小范围内波动。发酵罐内液面高度为18cm。发酵罐内测点位于1cm、7cm、14cm三个高度的平面上。每个高度平面沿着半径方向上有3个测点。

实验室第一次测定干红葡萄酒,室温在26℃上下的小范围内波动。发酵罐内测点高度位于1.5cm、7.5cm、14cm的三个高度平面上。沿着半径方向上,每个高度平面上有4个测点。

实验室第二次测定干红葡萄酒,室温维持在26.25℃上下的小范围波动。发酵罐内的9个测点位于3cm、9.5cm、16cm三个高度平面上,每个高度平面沿着半径方向上有3个测点。另外布置一个测点测定室温的变化。

在实验分析的过程中得出Ansys热分析所需要的各项参数。利用实验数据分析得到的结果与Ansys模拟分析结果两者相比较,分析发酵罐内温度场变化,为工业葡萄酒的发酵提供一定的参考。

Abstract

During the wine fermentation process,higher temperature will make wine fermentation taste and smell worse. The control of the temperature plays an important role on wine quality. Therefore,pick for fermentation temperature distributions research,which helps to the fermentation process of fermentation temperature control. Improve the quality of wine. Improve the quality of wine.

This article through the use of thermal analysis software ANSYS10.0,which to study the fermentation temperature changes and analysis. Analysis white wine in the laboratory of overall temperature,the temperature distribution,in a period of time the same plane continuous changes in temperature. Using software to simulate the temperature distribution of red wine,analyzes the whole and local inside temperature change trend,analysis of the internal flow field change. Provide theory basis for heat exchanger in place and fermentation tank refrigeration equipment design.

Detecting white wine in the laboratory,room temperature keeps at little fluctuation at range of 18 degrees Celsius. The fluid inside surface height is 18cm. Fermentation tank point located at the three of 1cm,7cm,14cm the plane height. Each direction has three points along the radius of the high plane.

In the process of the experimental analysis that obtain the required parameters for Ansys. Use experimental results compared with Ansys analysis results,Analysis the temperature filed regular pattern. Provide reference for industrial wine fermentation.
