牛羊肉泡馍是陕西著名清真小吃，号称“陕西一绝”。它是在古代牛羊羹的基础上发展起来的。早在公元前11世纪的西周时就将其列为王室和诸侯的“礼馔”。《史记》中就有关于牛羊羹的诗句。

牛羊肉泡馍的烹制及食法颇为讲究，分为四个花色品种。进餐者自己动手，根据习惯爱好将馍掰碎，小若豌豆，以便五味入内；厨师煮馍时，以馍定汤，配以恰当调料，武火急煮，适时装碗；吃时更为讲究，应从一边一点点地“蚕食”，才能保持味道始终鲜美。

关于牛羊肉泡馍的吃法，相传与宋太祖赵匡胤有关。相传赵匡胤早年贫困潦倒，流落于长安街头。一日饥寒交迫，求牛羊肉铺施舍一勺汤泡馍，吃后饥寒全消。十年后，赵匡胤已是宋朝的开国皇帝。一次，他出巡长安，又来到这家牛羊肉铺，命店主做一碗羊肉汤泡馍。店主连忙让妻子烙饼掰碎，精心配好调料，浇上汤又煮了煮，还放上几大片羊肉端上。没想到皇帝吃后大加赞赏，当即给店主赏银百两。此事很快传遍长安，来吃这种羊肉汤泡馍的人越来越多。由于生意兴隆，店小二来不及给客人掰馍，于是改为客人自己掰馍，此种吃法一直流传至今。

1644年，西安专营羊肉泡馍的“老马家”在桥梓口开业，食客盈门，誉满古城。1900年，八国联军占领北京，慈禧太后携光绪避居西安，特地来此店品尝，备加赞赏，并写下“天赐楼”三个大字。从此，“天赐楼”名声大振。

牛羊肉泡馍的特点是肉嫩汤浓，香醇味美，食后再饮一小碗高汤，更觉余香满口，回味悠长，是一种高蛋白质、高碳水化合物、高能量的食品。一年四季均可食用，冬季更佳。

The Shredded Pancake in Mutton or Beef Soup is a local Moslem delicacy honored as a“superb dish in Shaanxi”.It is originated from mutton and beef custard.In ancient times it was listed as royal food in the Western Zhou Dynasty.Poems about it can also be found in Sima Qian's Records of the Historian.

The making and eating of this sort of local snack requires special attention.It is divided into four types that are to be taken in different ways.The normal way to have it is that the eater must first use his own hands to break the baked cake into pea－like tiny pieces so that the five tastes of the seasoned soup will easily soak into the broken pieces and make them tasty，whereas the cooker has to provide suitable amount of soup according to the type and quanti－ty of the cake.He has to put all sorts of seasonings into the broth in a correct way and boil it over a blazing fire，and then pour it into the bowl at the right moment.The person enjoying it must also eat it from one side to the other just like a silkworm eating a mulberry leaf.

There is a legend that connects this delicacy with Emperor Taizu，Zhao Kuangyin，the first em peror of the Song Dynasty.Zhao was poverty stricken and homeless at an early age.One day when he was wandering in the street，he begged in a meat store for some hot mutton soup.After eating his shredded pancake mixed in the hot soup，he felt much warmer and energetic.Ten years later，Zhao came to the throne.Once，when he was on an in spection tour in Chang'an，he came to the store where he had begged for soup and asked for a dish of shredded pancake in hot soup.The owner asked his wife to bake some pancakes，broke them into small pieces and cooked it for a few seconds with seasoning and soup and at last added several mutton slices.To his surprise，when the dish was served，Zhao enjoyed it immensely and awarded the owner with 100 teals of silver.When this story spread，more people came to the store to try this delicacy. Since the helpers in the store were fully occupied，the diners had to break the pancakes by themselves. This is still practiced today.

In 1644，a restaurant named Lao Ma's opened at Qiaozikou and specialized in making this delicacy. Everyday the restaurant was crowed with diners and thus its business prospered.Later，after the Eightpower Allied Force occupied Beijing in 1900，Empress Dowager Cixi and Emperor Guangxu fled to Xi'an.Cixi thought highly of the dish after she tasted it and wrote down three Chinese characters for the restaurant—Tian Ci Lou（restaurant conferred by the royal family）.Ever since then，the restaurant has grown more famous.

The special characteristics are：the broth is rich and thick with a delicious taste.Drinking a bowl of soup will give a lasting flavor in the mouth.Rich in protein and carbon dioxide，it is a high energy food that can be eaten all year round，although winter is the best season to enjoy it.

My Roommate

我的室友对她英国文学课上的一个年轻人有意思，但又不好意思让他知道。一天，她听到他和别人说要去图书馆借本书。她冲到图书馆，找到那本书，夹进去她妈妈来的一封信。

“他怎么会想看你妈妈来的信呢？”我问。

“他不会看的。但如果他还算是个绅士的话，他会把信还给我的。”当然啦，她的宿舍房间号码就在信封上。

第二天，他拿着那封信出现了，并约我的室友出去。“错不了的，”她后来对我说，“那本书的书名是《远大前程》。”

My roommate was interested in a young man in her English literature class，but she was too shy to let him know．One day she overheard him say he was on his way to the library for a certain book．She rushed to the library，found the book and stuck a letter from her mother in it．

“Why would he want to read a letter from your mother？”I asked．

“He wouldnt，but if hes any kind of gentleman，hell return it to me．”Her dorm room number was on the envelope，of course．

The next day he appeared with the letter and asked my roommate out on a date．“Couldnt fail，”she later told me．“The book was Great Expectations．”
